These quick and easy cranberry brie bites are made with puff pastry, creamy brie, and sweet-tart cranberry sauce. Perfect for holiday parties, game day gatherings, or a fun after-school snack, they come together in under 30 minutes and are always a crowd-pleaser.

Ingredients

Scale
  • 1 sheet frozen puff pastry, thawed
  • 4 ounces brie cheese, rind removed and cut into 24 small cubes
  • ⅓ cup cranberry sauce
  • 1 large egg, beaten
  • 1 tablespoon fresh rosemary, finely chopped (optional)
  • Flaky sea salt, for sprinkling

Instructions

  1. Preheat your oven to 400°F (200°C). Grease a 24-cup mini muffin tin with baking spray or butter.
  2. On a lightly floured surface, roll out the thawed puff pastry sheet to about ⅛-inch thickness.
  3. Using a 2-inch round cookie cutter, cut out 24 circles from the pastry. Gather scraps, re-roll, and cut more circles to get exactly 24.
  4. Press each pastry circle into a mini muffin cup, gently molding it to form a small cup shape.
  5. Place one cube of brie cheese into each pastry cup.
  6. Top each brie cube with about ½ teaspoon of cranberry sauce.
  7. Brush the edges of the pastry with the beaten egg wash.
  8. Sprinkle a pinch of fresh rosemary (if using) and a tiny pinch of flaky sea salt over each bite.
  9. Bake for 12-15 minutes, or until the pastry is puffed and golden brown and the brie is melted and bubbly.
  10. Let them cool in the pan for 2-3 minutes before carefully removing them with a small spatula or butter knife. Transfer to a serving platter and serve warm.

Notes

Thaw puff pastry properly (in fridge overnight or on counter for 30 minutes). Don’t overfill bites—use a small cube of brie and ½ teaspoon cranberry sauce. Use room temperature brie for even melting. Watch the oven closely; start checking at 10 minutes. For make-ahead, assemble up to 24 hours in advance and refrigerate, then bake just before serving. Leftovers can be stored in an airtight container in the fridge for up to 2 days; reheat in a 350°F oven for 5-7 minutes.
