  • ยพ cup (180ml) vegetable oil

  • ยฝ cup (60g) chopped pecans or walnuts (optional)

Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC). Grease a 9×5-inch loaf pan or 10-inch Bundt pan generously with butter and dust with flour.
  2. In a large bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg. Set aside.
  3. In a medium bowl, combine the brown sugar, granulated sugar, and vegetable oil. Whisk until it looks like wet sand, about 30 seconds.
  4. Add the eggs one at a time, whisking well after each. Then whisk in the buttermilk and vanilla until smooth and pale brown.
  5. Pour the wet ingredients into the dry ingredients. Use a rubber spatula to fold gently until just combinedโ€”a few lumps are fine. Do not overmix.
