Ingredients

Scale
  • 3 cups cooked, shredded chicken (rotisserie chicken recommended)
  • 8 ounces cream cheese, softened to room temperature
  • 1/2 cup Buffalo wing sauce (Frank’s RedHot Original recommended)
  • 1/2 cup ranch dressing or blue cheese dressing
  • 1 1/2 cups shredded sharp cheddar cheese, divided
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and black pepper, to taste
  • 12-count package of sweet Hawaiian rolls or soft slider buns
  • 3 tablespoons unsalted butter, melted
  • 1 tablespoon honey (optional)
  • 1 teaspoon garlic salt
  • 1 tablespoon poppy seeds or sesame seeds
  • Fresh chopped chives or green onions for garnish (optional)
  • Extra Buffalo sauce for drizzling (optional)
  • Blue cheese crumbles for finishing touch (optional)

Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC). Lightly grease a 9×13-inch baking dish with non-stick spray or butter.
  2. In a medium mixing bowl, combine the softened cream cheese, Buffalo wing sauce, ranch dressing, 1 cup of the shredded cheddar cheese, garlic powder, and onion powder. Mix until smooth and well combined.
  3. Fold in the shredded chicken until every piece is coated. Taste and adjust seasoning if desired.
  4. Without separating the individual rolls, cut the entire slab of 12 rolls in half horizontally. Place the bottom half into the prepared baking dish.
  5. Spread the Buffalo chicken filling evenly over the bottom half of the rolls. Sprinkle the remaining 1/2 cup of shredded cheddar cheese over the filling.
  6. Place the top half of the rolls back on and press down gently.
  7. In a small bowl, mix the melted butter, honey (if using), garlic salt, and poppy seeds. Brush this mixture generously over the tops of the rolls.
  8. Cover the baking dish with aluminum foil and bake for 15 minutes.
  9. Remove the foil and bake for another 5-7 minutes, or until the tops are golden brown and slightly crispy.
  10. Let the sliders rest in the baking dish for 5 minutes before cutting along the seams of the rolls. Serve warm.

Notes

For best results, use full-fat cream cheese and shred cheddar cheese from a block. Let the sliders rest for 5 minutes before cutting to help them hold together. The filling can be made ahead and refrigerated.
