  • 1 tablespoon Dijon mustard

  • Salt and black pepper to taste
  • 1 tablespoon apple cider vinegar

Instructions

  1. Preheat oven to 375ยฐF (190ยฐC). Let pork tenderloin sit at room temperature for 15 minutes. Pat dry and season generously with salt and pepper.
  2. Heat olive oil in a large Dutch oven over medium-high heat. Sear the pork for 3-4 minutes per side until deep golden brown. Remove to a plate.
  3. Reduce heat to medium. Add butter, then sliced onion. Cook 2-3 minutes until softened. Add garlic and cook 30 seconds until fragrant.
