Best Easy Double Chocolate Chip Pumpkin Muffins

  • 1 ¾ cups all-purpose flour (spooned and leveled)
  • ½ cup unsweetened cocoa powder (Dutch-process preferred)
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 ½ teaspoons pumpkin pie spice
  • 1 cup granulated sugar
  • ½ cup packed light brown sugar
  • 2 large eggs, at room temperature
  • ½ cup vegetable oil (or melted coconut oil)
  • 1 teaspoon vanilla extract
  • 1 cup pumpkin puree (not pumpkin pie filling)
  • ½ cup milk (whole milk preferred)
  • 1 cup semi-sweet chocolate chips
  • ½ cup dark chocolate chunks
  • ¼ cup mini chocolate chips (optional, for topping)

Instructions

  1. Preheat the oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease well.
  2. In a large bowl, whisk together flour, cocoa powder, baking soda, baking powder, salt, and pumpkin pie spice until evenly distributed.
  3. In a separate medium bowl, whisk together granulated sugar, brown sugar, eggs, vegetable oil, vanilla extract, pumpkin puree, and milk until smooth.
  4. Pour the wet ingredients into the dry ingredients. Fold gently with a rubber spatula until just combined (a few lumps are okay).
  5. Fold in semi-sweet chocolate chips and dark chocolate chunks with a few strokes.
  6. Divide batter evenly among the 12 muffin cups, filling each about ¾ full. Sprinkle mini chocolate chips on top if using.
  7. Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  8. Let muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For domed tops, let batter rest 10 minutes before baking. Do not overmix. Use room temperature ingredients for best texture. Store in airtight container at room temperature up to 4 days or freeze up to 3 months.
