These roasted pumpkin seeds with smoked paprika are the perfect fall snack—crunchy, smoky, and incredibly easy to make. Boiling the seeds first ensures they’re perfectly crispy every time.

Ingredients

Scale
  • 1 cup pumpkin seeds (fresh from a medium sugar pumpkin, about 1 ½ cups before cleaning)
  • 2 tablespoons olive oil (or avocado oil)
  • 1 ½ teaspoons smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon sea salt (plus more for sprinkling)
  • ¼ teaspoon black pepper (freshly ground)
  • Pinch of cayenne pepper (optional)
  • 4 cups water (for boiling)
  • 1 tablespoon salt (for boiling)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper if desired.
  2. Separate the seeds from the pumpkin guts. Scoop seeds and pulp into a large bowl, fill with cold water, and use your fingers to separate seeds from pulp. Discard pulp and flat, pale seeds. Rinse until water runs mostly clear.
  3. Boil the seeds: Bring 4 cups water and 1 tablespoon salt to a boil in a medium saucepan. Add cleaned seeds and boil for exactly 10 minutes.
  4. Drain and dry the seeds thoroughly. Pour into a colander, let cool briefly, then spread on a clean kitchen towel or paper towels. Pat dry and let air-dry for 5-10 minutes.
  5. In a mixing bowl, combine dried seeds with olive oil, smoked paprika, garlic powder, ½ teaspoon salt, black pepper, and cayenne (if using). Toss until evenly coated.
  6. Spread seeds in a single, even layer on the prepared baking sheet. Do not overcrowd.
  7. Roast for 15-20 minutes, stirring halfway through. Seeds should be golden brown and fragrant. They will continue to crisp as they cool.
  8. Cool completely on the baking sheet on a wire rack for at least 15-20 minutes before serving. Sprinkle with additional salt if desired.

Notes

Boiling the seeds is the secret to perfect crispiness—do not skip. Dry seeds thoroughly before roasting to avoid steaming. Watch the oven closely in the last 5 minutes as seeds can burn quickly. For best texture, cool completely before serving.
