Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
  2. Melt the butter in a microwave-safe bowl in 20-second bursts or in a small saucepan over low heat. Let it cool for 2 minutes.
  3. In a medium mixing bowl, whisk together the melted butter, granulated sugar, and brown sugar for about 30 seconds until smooth and slightly thickened.
  4. Add the egg yolk and vanilla extract. Whisk vigorously for about 45 seconds until the mixture is pale, slightly fluffy, and falls off the whisk in ribbons.
