Instructions

  1. Prep the apples: Peel, core, and slice apples into thin wedges (about ยผ inch thick). Toss with brown sugar, cinnamon, lemon juice, and cornstarch. Let sit for 5 minutes.
  2. Make the oat topping: In a small bowl, combine rolled oats, whole wheat pastry flour, brown sugar, cinnamon, and salt. Add cold butter cubes and Greek yogurt. Use a pastry cutter or fingers to work butter into dry ingredients until mixture resembles coarse crumbs with some pea-sized butter pieces. Refrigerate.
  3. Layer the apples: Spread apple mixture evenly in a 9×13 inch baking dish in a single layer.
  4. Add the cake mix: Sprinkle dry cake mix evenly over apples. Do not stir. Add an extra teaspoon of cinnamon on top.
