This isn’t just another squash soup. The nutty, almost toasty flavor of the brown butter completely changes the game, making the soup feel incredibly rich without being heavy. It’s the secret weapon that turns simple ingredients into something you’d order at a fancy café.

Ingredients

Scale
  • 2 medium acorn squash (about 2.5 lbs total) – halved and seeded
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 1 medium yellow onion – chopped (about 1 cup)
  • 2 cloves garlic – minced
  • 1 teaspoon fresh sage – chopped (or 1/2 teaspoon dried sage)
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon cayenne pepper (optional)
  • 4 cups low-sodium vegetable broth
  • 1/2 cup water (to thin if needed)
  • Salt and freshly ground black pepper – to taste
  • 4 tablespoons unsalted butter (for brown butter topping)
  • 6–8 fresh sage leaves (for garnish)
  • Pinch of flaky sea salt (like Maldon, to finish)

Instructions

  1. Preheat your oven to 400°F (200°C). Rub the cut sides of the acorn squash with the olive oil and a pinch of salt. Place them cut-side down on a baking sheet. Roast for 30-35 minutes, or until the flesh is very tender and easily pierced with a fork. Let cool slightly, then scoop out the flesh and discard the skin.
  2. While the squash roasts, set a large pot over medium heat. Add 1 tablespoon of butter. Once melted, add the chopped onion and cook for 4-5 minutes until soft and translucent. Add the garlic, fresh sage, nutmeg, and cayenne (if using). Cook for 1 more minute until fragrant.
  3. Add the roasted squash flesh and vegetable broth to the pot. Stir, scraping up any browned bits. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes to let flavors meld.
  4. Remove the pot from heat. Use an immersion blender to blend until completely smooth. If using a countertop blender, work in batches. Stir in the 1/2 cup of water or more broth if needed to reach desired consistency. Season with salt and pepper to taste.
  5. In a small skillet, melt 4 tablespoons of butter over medium heat, swirling occasionally. Cook until the butter turns a golden amber color and smells nutty (about 3-4 minutes). Immediately add the fresh sage leaves; they will sizzle and crisp in about 30 seconds. Remove from heat.
  6. Ladle the hot soup into bowls. Drizzle a generous spoonful of brown butter over each serving, top with crispy sage leaves, and finish with a pinch of flaky sea salt.

Notes

Getting the brown butter right is the most important part. Don’t walk away from the pan! It can go from perfect to burnt in seconds. Keep a cold plate next to the stove—if you think it’s getting close, pour it onto the plate to stop the cooking process. Also, make sure you roast the squash cut-side down. This steams the inside while caramelizing the edges, giving you the sweetest, most concentrated flavor. A common mistake is not seasoning enough. Squash is sweet, so it needs a good amount of salt to balance it. Taste the soup before you add the brown butter, and then again after. The salty, crispy sage is a game-changer—don’t skip it. If you’re short on time, you can microwave the squash for 5 minutes before cutting to soften the skin.
