A comforting apple crisp with a generous, crunchy oat-pecan topping that stays crisp even the next day. Perfect for fall, this easy dessert comes together in about an hour with simple ingredients.

Ingredients

Scale
  • 6 cups apples, peeled, cored, and sliced (about 5–6 medium apples; a mix of Granny Smith and Honeycrisp recommended)
  • 1/3 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 1 tablespoon lemon juice
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 cup old-fashioned rolled oats
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar, packed
  • 1/2 cup chopped pecans
  • 1/2 cup unsalted butter, cold and cut into small cubes
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC). Position the rack in the center of the oven.
  2. Prepare the apples: Peel, core, and slice your apples into roughly 1/4-inch thick slices. Toss them in a bowl with the lemon juice to prevent browning.
  3. Make the filling: In a large bowl, combine the sliced apples, granulated sugar, brown sugar, lemon juice, flour, cinnamon, nutmeg, and salt. Toss until the apples are evenly coated.
  4. Transfer the filling to a greased 9×13-inch baking dish. Spread evenly without packing down.
  5. Make the topping: In a medium bowl, whisk together the oats, flour, brown sugar, chopped pecans, cinnamon, and salt. Add the cold butter cubes and vanilla extract. Use a pastry cutter, two forks, or your fingertips to cut the butter into the dry ingredients until the mixture resembles coarse meal with some pea-sized butter pieces remaining.
  6. Assemble the crisp: Sprinkle the topping evenly over the apples. Do not press down.
  7. Place the dish on a baking sheet and bake for 40-45 minutes. After 30 minutes, check the topping; if browning too quickly, tent loosely with foil. The crisp is done when the filling is bubbly and thickened, and the topping is deep golden brown and crunchy.
  8. Cool on a wire rack for at least 15-20 minutes before serving to allow the filling to set.

Notes

For best results, use a mix of apple varieties (Granny Smith and Honeycrisp). Keep the butter cold for a crunchy topping. Let the crisp rest for 15-20 minutes after baking to allow the filling to set. Toast the pecans for extra flavor. Place the baking dish on a sheet pan to catch any overflow.
