  • 1 cup (120g) powdered sugar
  • 2 tablespoons (30ml) apple cider
  • ½ teaspoon ground cinnamon
  • 1 tablespoon (15g) unsalted butter, melted

Instructions

  1. Brown the butter: Place 1 cup butter in a light-colored saucepan over medium heat. Stir frequently until it foams, turns golden, and develops brown specks (5-7 minutes). Remove from heat immediately and pour into a heatproof bowl. Let cool for 10 minutes.
  2. Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper.
  3. In a large bowl, whisk together cooled brown butter and granulated sugar until combined. Add eggs one at a time, whisking well after each. Stir in vanilla extract.
  4. In a separate medium bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  5. Add half of the dry ingredients to the wet mixture and stir gently. Pour in half of the apple cider and stir. Repeat with remaining dry ingredients and cider. Mix until just combined.
  6. Pour batter into prepared pan and smooth the top. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  7. Let cake cool in pan for 10 minutes, then turn out onto a cooling rack. Cool completely before glazing.
  8. Make the glaze: In a small bowl, whisk together powdered sugar, 2 tablespoons apple cider, ½ teaspoon cinnamon, and melted butter until thick but pourable.
  9. Pour glaze over cooled cake, letting it drip down the sides. Let set for 10 minutes before slicing. Serve at room temperature.

Watch the butter closely to avoid burning. Use room temperature eggs to prevent the brown butter from seizing. Cool the cake completely before glazing for best presentation. For a gluten-free version, use a 1:1 gluten-free baking blend. For a vegan adaptation, use vegan butter and flax eggs.
