  • 1 lb (450 g) ground beef (80/20)
  • 4 large russet potatoes, peeled and diced
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 4 cups (32 fl oz / 950 ml) chicken broth (low sodium preferred)
  • 2 cups (8 oz / 225 g) sharp cheddar cheese, shredded
  • 1 cup (8 fl oz / 240 ml) milk (whole or 2%)
  • 68 slices bacon, cooked crisp and crumbled
  • 2 tbsp (30 g) butter
  • 2 tbsp (16 g) all-purpose flour
  • 1 tbsp Worcestershire sauce
  • Salt and pepper to taste
  • Optional garnishes: chopped green onions or fresh parsley

Instructions

  1. Cook the bacon in a cold skillet over medium heat until crispy, about 8-10 minutes. Remove and drain on paper towels. Reserve 1-2 tablespoons of bacon fat in the skillet.
  2. Brown the ground beef in the reserved bacon fat over medium-high heat, breaking it up with a wooden spoon, until no longer pink, about 6-8 minutes. Season lightly with salt and pepper. Drain excess fat if needed.
  3. Add the diced onion to the beef and cook until softened and translucent, about 4 minutes. Stir in minced garlic and cook for 1 minute until fragrant.
  4. Push the beef mixture to one side of the pot. Melt butter on the empty side, then stir in flour and cook for 1-2 minutes, whisking constantly until lightly golden and bubbling.
  5. Gradually whisk in chicken broth and milk. Add diced potatoes and Worcestershire sauce. Stir to combine.
  6. Bring to a gentle boil, then reduce heat to low and simmer uncovered for 20-25 minutes until potatoes are tender.
  7. Remove pot from heat and slowly stir in shredded cheddar cheese until melted and smooth. Adjust salt and pepper to taste.
  8. Ladle soup into bowls and top with crispy bacon crumbles. Garnish with chopped green onions or parsley if desired.

Notes

For gluten-free, substitute all-purpose flour with gluten-free flour or cornstarch slurry. For dairy-free, use coconut milk and vegan cheese substitute, omit butter or use plant-based spread. To thicken soup, mash some potato chunks before adding cheese. Add cheese off heat to prevent clumping. Browning beef well enhances flavor. Use russet potatoes for best texture. Leftovers keep well refrigerated for 3 days and freeze well.
