  • 4 large russet potatoes, peeled and diced
  • 8 slices thick-cut bacon
  • 1 ยฝ cups sharp cheddar cheese, shredded
  • 1 medium yellow onion, finely chopped
  • 2 garlic cloves, minced
  • 4 cups low sodium chicken broth (or vegetable broth for vegetarian)
  • 1 cup heavy cream (or half-and-half to lighten)
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Chopped chives or green onions (optional, for garnish)

Instructions

  1. Fry the bacon slices in a skillet over medium heat until crispy, about 8-10 minutes. Transfer to a paper towel-lined plate to drain and cool. Crumble half the bacon and set aside for the soup; reserve the rest for garnish. Reserve 1 tablespoon of bacon fat for sautรฉing.
  2. In the same skillet, melt butter (or reserved bacon fat) over medium heat. Add the finely chopped onion and cook for 4-5 minutes until soft and translucent. Add minced garlic and cook for another 30 seconds until fragrant.
  3. Sprinkle all-purpose flour over the onions and garlic. Stir constantly for 2-3 minutes to cook out the raw flour taste and thicken the mixture.
  4. Scrape the onion-flour mixture into the slow cooker. Add peeled and diced potatoes and pour in the chicken broth. Stir to combine.
  5. Set the slow cooker to low and cover. Cook for 6-7 hours, or until potatoes are fork-tender and soup has thickened slightly. Alternatively, cook on high for 3-4 hours.
  6. Use a potato masher or immersion blender to mash some potatoes in the crockpot, leaving some chunks for texture.
  7. Stir in heavy cream, shredded cheddar cheese, and crumbled bacon reserved earlier.
  8. Season gradually with salt and black pepper, tasting as you go.
  9. Ladle soup into bowls and garnish with remaining crispy bacon bits and chopped chives or green onions. Serve warm.

Notes

For gluten-free, replace all-purpose flour with cornstarch or gluten-free flour blend. For dairy-free, use dairy-free cheese and coconut cream instead of heavy cream. Crisp bacon separately to keep it crunchy. Partial potato mashing adds texture. Season gradually to avoid over-salting. Reheat gently to preserve creaminess.
