Cozy Crockpot Taco Soup with Ranch Seasoning

A warm, hearty taco soup made in the slow cooker with ground beef, beans, corn, and a unique blend of taco seasoning and ranch dressing mix. It’s an easy, comforting meal perfect for busy weeknights.

  • 1 pound ground beef (80/20)
  • 1 medium yellow onion, diced (about 1 cup)
  • 3 cloves garlic, minced (or 1 teaspoon garlic powder)
  • 1 packet (1 ounce) taco seasoning
  • 1 packet (1 ounce) ranch dressing mix
  • 1 can (15 ounces) diced tomatoes with green chiles (Rotel)
  • 1 can (15 ounces) fire-roasted diced tomatoes
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 can (15 ounces) kidney beans, rinsed and drained
  • 1 can (15 ounces) whole kernel corn, drained
  • 4 cups beef broth (low-sodium)
  • Shredded cheddar cheese (for topping)
  • Sour cream (for topping)
  • Fresh cilantro, chopped (for topping)
  • Green onions, sliced (for topping)
  • Tortilla chips (for topping)
  • Diced avocado (for topping)
  • Lime wedges (for topping)

Instructions

  1. Brown the ground beef in a large skillet over medium-high heat, breaking it up with a wooden spoon, until no longer pink (6-8 minutes). Drain excess fat if desired.
  2. Add diced onion to the skillet and cook for 2-3 minutes until softened. Add minced garlic and cook for 30 seconds until fragrant.
  3. Transfer the beef and onion mixture to a 6-quart slow cooker.
  4. Sprinkle taco seasoning and ranch dressing mix over the beef and stir to coat.
  5. Add diced tomatoes with green chiles, fire-roasted diced tomatoes (undrained), black beans, kidney beans, and corn. Stir to combine.
  6. Pour in beef broth and stir well.
  7. Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours.
  8. About 30 minutes before serving, taste and adjust seasoning with salt, pepper, or hot sauce if desired.
  9. Serve hot with desired toppings such as shredded cheese, sour cream, cilantro, green onions, tortilla chips, avocado, and lime wedges.

Notes

For a thicker soup, mash some beans against the side of the slow cooker. For a creamier version, stir in 4 ounces of softened cream cheese during the last 30 minutes. This soup tastes even better the next day.
