Ingredients

Scale
  • 2–3 medium apples (mix of sweet and tart, like Honeycrisp and Granny Smith)
  • 2 ripe but firm Bosc or Bartlett pears
  • 1 large pomegranate, seeded
  • 6–8 fresh figs, halved
  • 1 cup red or black seedless grapes, in small clusters
  • 1–2 Fuyu persimmons, sliced
  • 4 oz aged cheddar, sliced or cubed
  • 4 oz brie, at room temperature
  • 4 oz goat cheese, crumbled or in a log
  • 4 oz manchego, sliced into thin triangles
  • 4 oz prosciutto, thinly sliced
  • 4 oz salami (Genoa or soppressata), thinly sliced
  • 1 cup mixed nuts (roasted almonds, pecans, walnuts)
  • 2–3 tablespoons honey
  • 1 box water crackers or seedy crispbread
  • Fresh rosemary and thyme sprigs for garnish
  • 1/4 cup dried apricots or cranberries
  • 2 oz dark chocolate, broken into pieces

Instructions

  1. Prep your fruit: Wash all fruit thoroughly. Slice apples and pears into thin wedges. Halve figs. Cut persimmons into thin rounds. Seed pomegranate over a bowl of water. Leave grapes in small clusters.
  2. Prep your cheeses: Slice aged cheddar into thin triangles or cubes. Cut brie into wedges. Slice goat cheese log into rounds or leave whole. Slice manchego into thin triangles.
  3. Arrange the cheeses: Place cheeses in different spots around the boardโ€”brie on one side, cheddar opposite, goat cheese in the middle.
  4. Add the fruit: Fill spaces between cheeses with apple and pear slices in fans, fig halves, persimmon rounds, pomegranate seeds in piles, and grape clusters.
  5. Layer the meats: Drape prosciutto in loose ribbons near brie. Fold salami slices into quarters and place near cheddar.
  6. Fill the gaps: Add nuts in small clusters. Place small bowls of honey and dried fruit. Tuck fresh herb sprigs between items. Add dark chocolate pieces near pears.
  7. Add the crackers: Fan crackers out in a few spots around the board, scattering them for easy reach.
  8. Final touches: Drizzle honey over brie and goat cheese. Fill any empty spots with extra nuts or grapes. Step back and admire.

Notes

Slice apples and pears last and toss with lemon juice to prevent browning. Take cheeses out of fridge 30 minutes before serving. Don’t overcrowd the board; leave breathing room. For a vegan version, use vegan cheeses and skip meats. For gluten-free, use gluten-free crackers or cucumber rounds.
