Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 large yellow onion, diced (about 1.5 cups)
  • 3 cloves garlic, minced
  • 1 pound ground turkey (93/7 lean)
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 1 can (15 oz) tomato sauce
  • 2 cups low-sodium chicken broth
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 tablespoon unsweetened cocoa powder
  • 1 tablespoon brown sugar (optional)
  • For garnish: shredded cheddar cheese, sour cream or Greek yogurt, fresh cilantro, diced avocado, crushed tortilla chips, lime wedges

Instructions

  1. Heat the olive oil in a large Dutch oven over medium heat until shimmering.
  2. Add the diced onion and cook for 4-5 minutes until translucent. Add the minced garlic and cook for 1 minute until fragrant.
  3. Add the ground turkey and cook for 6-8 minutes, breaking it into crumbles, until no longer pink.
  4. Stir in the diced red and green bell peppers and cook for 2-3 minutes until softened.
  5. Add the chili powder, cumin, smoked paprika, oregano, cayenne, salt, and black pepper. Cook for 1 minute to bloom the spices.
  6. Pour in the fire-roasted diced tomatoes (with juices), tomato sauce, and chicken broth. Stir well, scraping up any browned bits from the bottom. Add the cocoa powder and brown sugar (if using) and stir until dissolved.
  7. Bring to a gentle boil, then reduce heat to low. Cover and simmer for 20 minutes, stirring occasionally.
  8. Stir in the drained and rinsed black beans and kidney beans. Simmer uncovered for 5-10 minutes until heated through and desired consistency is reached.
  9. Taste and adjust seasoning with more salt, cayenne, or a squeeze of lime juice as needed.
  10. Remove from heat and let rest for 5-10 minutes. Ladle into bowls, add desired garnishes, and serve.

Notes

For best flavor, make the chili a day ahead and reheat. If chili tastes flat, add a splash of lime juice or a pinch more salt. To reduce spiciness, omit or reduce cayenne pepper. For a vegetarian version, swap turkey for 2 cups cooked lentils or extra beans and use vegetable broth.
