  • 1 cup (240g) pumpkin puree (100% pure, not pie filling)
  • ½ cup (100g) granulated sugar
  • ¼ cup (50g) packed brown sugar
  • 2 large eggs, room temperature
  • ⅓ cup (80ml) vegetable oil
  • ¼ cup (60ml) milk (dairy or non-dairy)
  • 1 teaspoon vanilla extract
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup (175g) semi-sweet chocolate chips

Instructions

  1. Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners.
  2. In a medium bowl, whisk together gluten-free flour, pumpkin pie spice, baking powder, baking soda, and salt for about 20 seconds.
  3. In a large bowl, whisk together pumpkin puree, granulated sugar, brown sugar, eggs, oil, milk, and vanilla extract until smooth and glossy, about 30 seconds.
  4. Pour dry ingredients into wet ingredients. Fold gently with a rubber spatula until just combined (a few lumps are fine). Do not overmix.
  5. Fold in chocolate chips, reserving about 2 tablespoons for topping.
  6. Divide batter evenly among muffin cups, filling each about ¾ full. Sprinkle reserved chocolate chips on top and press gently.
  7. Bake for 18-22 minutes, until a toothpick inserted in the center comes out clean or with a few moist crumbs. Tops should be golden and spring back when touched.
  8. Let muffins cool in the pan for 5 minutes, then transfer to a cooling rack to cool completely.

Notes

Let the batter rest for 10-15 minutes before baking for a more tender texture. Use room temperature ingredients for best results. Check that your pumpkin puree is 100% pure pumpkin, not pumpkin pie filling. For dairy-free, use dairy-free chocolate chips and non-dairy milk. For vegan, use flax eggs and coconut oil.
