Ingredients

Scale
  • 2 ¼ cups (280g) all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ½ teaspoon salt
  • ½ cup (115g) unsalted butter, softened
  • ¾ cup (150g) packed brown sugar
  • ¼ cup (50g) granulated sugar
  • 1 large egg, room temperature
  • ½ cup (120g) pumpkin puree, canned or fresh
  • 1 teaspoon vanilla extract
  • 1 cup (175g) semisweet or milk chocolate chips
  • ½ cup (90g) white chocolate chips or melting wafers for piping
  • Optional: black gel icing for tiny spider details

Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper or silicone mats.
  2. In a medium bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt. Set aside.
  3. In a large bowl, cream softened butter with brown sugar and granulated sugar until light and fluffy, about 2-3 minutes.
  4. Beat in the egg, then stir in pumpkin puree and vanilla extract until smooth.
  5. Gradually add dry ingredients to wet mixture, stirring gently until just combined.
  6. Fold in chocolate chips evenly through the dough.
  7. Drop rounded tablespoons of dough onto prepared baking sheets, spacing about 2 inches apart.
  8. Bake for 10-12 minutes until edges are set but centers are slightly soft. Let cookies rest on baking sheet for 5 minutes.
  9. Transfer cookies to a cooling rack.
  10. Melt white chocolate chips in a microwave-safe bowl in 20-second increments, stirring until smooth.
  11. Pour melted white chocolate into a piping bag or plastic bag with a small corner snipped off.
  12. Pipe concentric circles of white chocolate on each cookie, then drag lines from center outward with a toothpick to create a spider web effect.
  13. Let white chocolate set completely at room temperature or in the fridge.
  14. Optional: Add tiny black gel icing spider details for a festive touch.

Notes

Chill dough for 15 minutes if too sticky. Melt white chocolate on low heat to avoid graininess. Practice piping spider webs on parchment paper first. Rotate baking sheets halfway through baking for even cooking. Dough freezes well; bake from frozen adding 1-2 minutes to baking time.
