Ingredients

Scale
  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced (about 1 cup)
  • 3 cloves garlic, minced
  • 2 medium carrots, peeled and diced
  • 2 celery stalks, diced
  • 1/2 cup sun-dried tomatoes in oil, drained and chopped
  • 1/4 cup sun-dried tomato oil (reserved from the jar)
  • 3 tablespoons all-purpose flour
  • 4 cups chicken broth (low-sodium)
  • 1 cup heavy cream
  • 1.5 pounds boneless, skinless chicken breasts (about 2 large breasts)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh basil, chopped
  • 1 tablespoon fresh lemon juice

Instructions

  1. Pat the chicken breasts dry with paper towels. Season both sides with salt, pepper, oregano, and red pepper flakes if using. Let them sit while you chop the veggies.
  2. Heat 1 tablespoon of olive oil in your Dutch oven over medium-high heat. Add the chicken breasts and cook for 5-6 minutes per side, until golden brown. Transfer to a plate and set aside.
  3. Reduce the heat to medium. Add the remaining 1 tablespoon of olive oil and the reserved sun-dried tomato oil. Toss in the onion, carrots, and celery. Cook for 5-7 minutes, stirring occasionally, until the onions are translucent and the carrots have softened.
  4. Stir in the minced garlic and chopped sun-dried tomatoes. Cook for 1 minute until fragrant.
  5. Sprinkle the flour over the vegetables and stir constantly for 2 minutes.
  6. Slowly pour in the chicken broth while whisking to prevent lumps. Scrape up any browned bits from the bottom of the pot. Bring to a simmer.
  7. While the broth heats up, shred the seared chicken breasts using two forks.
  8. Add the shredded chicken back to the pot. Reduce the heat to low and let it simmer for 10-12 minutes.
  9. Remove the pot from the heat. Stir in the heavy cream and grated Parmesan cheese.
  10. Stir in the fresh lemon juice. Taste and adjust seasoning with more salt or pepper if needed. Ladle into bowls and top with fresh basil.

Notes

Don’t skip searing the chicken for maximum flavor. When adding cream and cheese, ensure the soup is not boiling to prevent curdling. Season in layers for best results. Let the soup rest for 10-15 minutes before serving for melded flavors. For freezing, leave out cream and cheese, add when reheating.
