Instructions

  1. Prepare the maple pepita crunch: Heat a small nonstick skillet over medium-low heat. Add ¼ cup (30g) pepitas and 1 tablespoon maple syrup. Stir constantly for 3–5 minutes until pepitas are toasted and syrup is sticky but not burnt. Remove from heat and spread on parchment to cool.
  2. Mix the oats base: In a medium bowl or mason jar, combine 1 cup (90g) rolled oats, ½ cup (120g) pumpkin puree, 1½ teaspoons chai spice blend, 2 tablespoons maple syrup, 1 cup (240ml) milk of choice, ½ cup (120g) Greek yogurt (optional), 1 teaspoon vanilla extract, and a pinch of salt. Stir thoroughly to combine.
  3. Refrigerate overnight (at least 6 hours): Cover the bowl or seal the jar and place it in the fridge overnight to soak.
  4. Serve with pepita crunch and optional toppings: Stir the oats well in the morning. Portion into bowls and sprinkle generously with the cooled maple pepita crunch. Add extra milk if desired. Optional toppings include a dollop of yogurt, a drizzle of maple syrup, or a sprinkle of cinnamon.
