  • 1 teaspoon vanilla extract
  • 8 oz (225g) cream cheese, softened
  • ยผ cup (50g) granulated sugar
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • ยฝ cup (65g) all-purpose flour (for streusel)

  • 6 tablespoons (85g) unsalted butter, cold and cubed (for streusel)

Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC). Line a 12-cup muffin tin with paper liners or grease well.
  2. In a small bowl, combine ยฝ cup flour, โ…“ cup brown sugar, 1 teaspoon cinnamon, and ยผ teaspoon salt. Add 6 tablespoons cold cubed butter and mix until coarse crumbs form. Chill in the fridge.
  3. In a medium bowl, beat 8 oz softened cream cheese with ยผ cup sugar until smooth. Add 1 egg yolk and 1 teaspoon vanilla extract; mix until creamy. Set aside.
  4. In a large bowl, whisk together 1 ยพ cups flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
  5. In another bowl, whisk 2 eggs with pumpkin puree, vegetable oil, vanilla extract, granulated sugar, and brown sugar until smooth.
  6. Pour wet ingredients into dry ingredients and gently fold with a rubber spatula until just combined; do not overmix.
  7. Spoon about 2 tablespoons of batter into each muffin cup. Add 1 tablespoon of cream cheese filling on top, then cover with another 2 tablespoons of batter. Swirl gently with a toothpick to create a marbled effect.
  8. Sprinkle the chilled cinnamon streusel generously over each muffin.
  9. Bake for 20-25 minutes until a toothpick inserted comes out mostly clean with a few moist crumbs and streusel is golden.
  10. Cool muffins in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Keep the butter cold for the streusel to maintain crumbly texture. Do not overmix the batter to keep muffins tender. Use a light hand when swirling cream cheese to preserve the marbled effect. Room temperature eggs help create a smooth batter. Watch baking time closely to avoid dry muffins. The streusel crown is best fresh out of the oven.
