  • 1/3 cup (65 g) granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup (120 g) chopped pecans (toasted)
  • 2 tablespoons brown sugar
  • Optional: a pinch of flaky sea salt

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish or line it with parchment paper.
  2. In a large bowl, whisk together pumpkin puree, granulated sugar, vegetable oil, and eggs until smooth, about 2-3 minutes.
  3. In a separate bowl, sift or whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.
  4. Gradually fold the dry ingredients into the pumpkin mixture using a spatula until no streaks of flour remain, about 1-2 minutes.
  5. In a medium bowl, beat softened cream cheese with sugar, egg, and vanilla extract until smooth and creamy, about 2-3 minutes.
  6. Pour pumpkin batter evenly into the prepared pan. Dollop cream cheese mixture on top in spoonfuls and gently swirl with a knife or skewer to create ribbons.
