  • 1 large yellow onion, diced (about 1 ½ cups)
  • 3 medium carrots, peeled and diced (about 1 cup)
  • 3 celery stalks, diced (about 1 cup)
  • 4 cloves garlic, minced

  • ½ teaspoon dried rosemary
  • ½ teaspoon dried oregano
  • 8 cups low-sodium chicken broth
  • 2 bay leaves
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 large rotisserie chicken (about 2 ½ to 3 pounds)
  • 8 ounces wide egg noodles
  • 2 tablespoons fresh parsley, chopped (optional)
  • 1 tablespoon fresh lemon juice (optional)

Instructions

  1. Shred the chicken: Pull the meat off the rotisserie chicken, discarding the skin. Shred into bite-sized pieces using two forks. Set aside. Reserve the carcass.
  2. Sauté the vegetables: In a large Dutch oven, melt the butter over medium heat. Add the diced onion, carrots, and celery. Cook, stirring occasionally, for 6 to 8 minutes until softened and the onion is translucent.
  3. Add the garlic and herbs: Stir in the minced garlic, dried thyme, rosemary, and oregano. Cook for 1 minute until fragrant.
  4. Build the broth: Pour in the chicken broth, scraping the bottom of the pot. Add the bay leaves, salt, and pepper. Place the reserved chicken carcass into the pot.
  5. Simmer: Bring to a gentle boil, then reduce heat to low. Cover and let simmer for 20 minutes.
  6. Remove the carcass: Carefully lift the chicken carcass out of the pot using tongs. Discard. Fish out any small bones with a slotted spoon.
  7. Cook the noodles: Bring the broth back to a gentle boil. Add the egg noodles and cook according to package directions (usually 6 to 8 minutes), stirring occasionally.
  8. Add the chicken: Stir in the shredded chicken. Cook for 2 to 3 minutes until heated through. Adjust seasoning with salt and pepper.
  9. Finish and serve: Remove the bay leaves. If using, stir in the fresh lemon juice. Ladle into bowls and garnish with fresh parsley. Serve immediately.

Notes

For a party, cook noodles separately and add to each bowl to prevent mushiness. Don’t skip simmering the chicken carcass for a rich broth. Season in layers for best flavor.
