Instructions

  1. Make the salted caramel sauce: In a small saucepan over medium heat, melt 4 tablespoons unsalted butter. Add ยฝ cup packed light brown sugar and stir constantly for about 2 minutes until smooth and bubbly. Slowly pour in ยผ cup heavy cream while stirring. Cook for 1 minute, then remove from heat. Stir in ยฝ teaspoon flaky sea salt and 1 teaspoon vanilla extract. Set aside to cool slightly.
  2. Preheat oven to 350ยฐF (175ยฐC). Wash, core, and slice apples into ยผ-inch thick pieces (peel on or off as desired). In a large bowl, toss apples with 1 tablespoon lemon juice, 1 teaspoon cinnamon, ยผ teaspoon nutmeg, and 1 tablespoon cornstarch until evenly coated.
  3. Make the oat crumble: In a medium bowl, combine 1 cup rolled oats, ยฝ cup all-purpose flour, ยฝ cup packed light brown sugar, ยฝ teaspoon cinnamon, and ยผ teaspoon salt. Add 6 tablespoons cold cubed butter. Use a pastry cutter, two knives, or your fingers to work the butter into the dry mixture until it resembles coarse crumbs with some pea-sized butter pieces. Chill in the fridge for 10 minutes.
  4. Assemble the crisp: Spread the apple mixture evenly into a greased 8×8-inch baking dish. Pour the salted caramel sauce over the apples, covering as much surface as possible. Sprinkle the oat crumble evenly over the top and press down gently.
  5. Bake for 35-40 minutes, or until the filling is bubbly and the topping is golden brown. If the crumble browns too quickly, tent loosely with foil for the last 10 minutes. Let cool on a wire rack for at least 15 minutes before serving.

Notes

For a gluten-free version, use almond flour or a gluten-free baking blend in the crumble. For a vegan version, use vegan butter and coconut cream. Let the crisp rest for at least 15 minutes after baking to allow the filling to set. Store leftovers covered in the refrigerator for up to 4 days. Reheat in a 350ยฐF oven for 5-7 minutes to re-crisp the topping.
