A cozy and easy homemade fall favorite latte featuring creamy oat milk, brown sugar, and warm pumpkin pie spices for a perfectly balanced pumpkin spice latte.

  • 1 shot (1 oz / 30 ml) espresso or 1/4 cup (60 ml) strong brewed coffee
  • 1 cup (240 ml) unsweetened oat milk, chilled or room temperature
  • 2 tablespoons packed (about 25 grams) light brown sugar
  • 2 tablespoons (30 grams) canned pumpkin puree (not pumpkin pie filling)
  • 1/2 teaspoon pure vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1/8 teaspoon ground ginger
  • Pinch of ground cloves (optional)
  • A tiny pinch of salt

Instructions

  1. Prepare 1 shot (1 oz / 30 ml) of espresso or about 1/4 cup (60 ml) of strong brewed coffee. Set aside.
  2. In a small bowl, combine 2 tablespoons (30 grams) pumpkin puree with 1/2 teaspoon cinnamon, 1/8 teaspoon nutmeg, 1/8 teaspoon ginger, and a pinch of cloves if using. Stir until well blended.
  3. Pour 1 cup (240 ml) oat milk into a small saucepan over medium-low heat. Warm gently until steaming but not boiling (about 2-3 minutes), stirring frequently.
  4. Whisk in 2 tablespoons brown sugar and the pumpkin-spice mixture into the warm oat milk. Continue whisking until sugar dissolves and mixture is smooth and slightly thickened (about 1-2 minutes).
  5. Froth the milk mixture using a handheld frother or whisk vigorously until frothy and creamy. Alternatively, shake in a sealed jar for 30 seconds carefully.
  6. Pour the espresso or strong coffee into a heatproof mug, then slowly add the frothed pumpkin oat milk on top. Use a spoon to hold back foam and then spoon it over as a final touch.
  7. Stir in 1/2 teaspoon vanilla extract and a tiny pinch of salt. Taste and adjust sweetness if needed by adding more brown sugar or maple syrup.
  8. Optionally, sprinkle a dash of cinnamon or pumpkin pie spice on top for garnish.

Notes

Warm oat milk gently over medium-low heat to avoid curdling. Use brown sugar for a deeper caramel flavor. Froth oat milk just before serving for best texture. Adjust sweetness with maple syrup or reduce sugar for less sweetness. Store pumpkin oat milk mixture separately in fridge up to 2 days and reheat gently before use.
