Ingredients

Scale
  • 1 cup (90 g) rolled oats
  • 1 cup (240 ml) milk (whole or dairy-free alternative)
  • 1/2 cup (120 g) Greek yogurt (or dairy-free yogurt)
  • 1 medium apple (about 1 cup/125 g), diced
  • 2 tablespoons (28 g) unsalted butter (or vegan butter)
  • 1/4 cup (50 g) dark brown sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • 1/2 cup (45 g) rolled oats (for crumble)
  • 1/4 cup (30 g) all-purpose flour (or almond flour for gluten-free)
  • 2 tablespoons (25 g) brown sugar (for crumble)
  • Maple syrup or honey (optional, for drizzling)

Instructions

  1. Prepare the caramel sauce: In a small saucepan over medium heat, melt 2 tablespoons unsalted butter. Stir in 1/4 cup dark brown sugar and a pinch of salt. Cook, stirring constantly, until sugar dissolves and mixture bubbles, about 2-3 minutes. Remove from heat and add 1/2 teaspoon vanilla extract. Let cool slightly.
  2. Mix the oats base: In a large bowl, combine 1 cup rolled oats, 1 cup milk, and 1/2 cup Greek yogurt. Stir in 1 teaspoon ground cinnamon and the cooled caramel sauce. Mix until well combined.
  3. Add the apples: Dice one medium apple into small chunks and fold into the oat mixture evenly.
  4. Make the toasted crumble: Preheat oven to 350°F (175°C). On a baking sheet, combine 1/2 cup rolled oats, 1/4 cup all-purpose flour, 2 tablespoons unsalted butter (cut into small pieces), 2 tablespoons brown sugar, and a pinch of cinnamon. Mix until crumbly. Spread evenly and toast for 10-12 minutes, stirring halfway through, until golden and fragrant. Cool completely.
  5. Assemble and chill: Spoon oat mixture into individual jars or containers. Cover and refrigerate overnight or at least 6 hours.
  6. Serve: Sprinkle a generous layer of toasted crumble on top before serving. Optionally drizzle with maple syrup or honey.

Notes

Use organic, firm apples for best texture. Add crumble topping just before serving to keep it crunchy. Soak oats for 8-10 hours for optimal creaminess. For gluten-free, use certified gluten-free oats and almond flour. Caramel sauce should be cooled before mixing to avoid curdling. Stir oats before eating to distribute flavors.
