Instructions

  1. Peel and dice potatoes into ½-inch cubes. Dice onion and mince garlic. Cook bacon until crispy, then crumble. Shred cheese from a block.
  2. Add diced potatoes, chicken broth, butter, diced onion, minced garlic, dried thyme, salt, and pepper to a 6-quart or larger slow cooker. Stir to combine.
  3. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until potatoes are tender when pierced with a fork.
  4. Mash about half the potatoes directly in the slow cooker with a potato masher, leaving some chunks for texture.
  5. In a separate bowl, whisk together whole milk, heavy cream, and sour cream until smooth. Slowly pour into the slow cooker while stirring constantly.
  6. Stir in shredded cheddar cheese until melted. Let cook on low for another 10-15 minutes. Adjust salt and pepper to taste.
