  • 3 pounds russet potatoes, peeled and diced
  • 6 slices bacon, chopped
  • 2 cups sharp cheddar cheese, shredded
  • 1 medium yellow onion, finely chopped
  • 2 garlic cloves, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup sour cream
  • Salt and black pepper, to taste
  • 2 tablespoons chives, chopped (optional)

Instructions

  1. Cook the bacon in a medium skillet over medium heat until crisp, about 6-8 minutes. Remove with a slotted spoon and drain on paper towels, reserving a tablespoon of bacon fat in the skillet.
  2. Add the chopped onion to the bacon fat and cook for 4-5 minutes until translucent. Stir in the garlic and cook another 30 seconds until fragrant. Transfer this mixture to the crockpot.
  3. Peel and dice the russet potatoes into roughly 1-inch cubes. Add them to the crockpot along with the cooked bacon.
  4. Pour 4 cups of chicken broth over the potatoes and onion mixture. Season lightly with salt and pepper. Stir gently to combine.
  5. Cover and cook on low for 6-7 hours, or on high for 3-4 hours, until potatoes are fork-tender and starting to break down.
  6. Using a potato masher or immersion blender, gently mash some of the potatoes in the crockpot to create a creamy texture while leaving chunks for body. Be careful not to puree the whole soup.
  7. Stir in 1 cup heavy cream and 1/2 cup sour cream until fully combined and creamy.
  8. Gradually mix in 2 cups shredded sharp cheddar cheese, stirring until melted and smooth. Taste and adjust salt and pepper.
  9. Ladle soup into bowls and garnish with extra bacon bits, chopped chives, and additional shredded cheddar if desired.

Notes

Crisp the bacon separately for best texture and flavor. Sautรฉ onions and garlic before adding to crockpot to enhance sweetness. Mash potatoes gently to keep some chunks for texture. Add cheese off heat to prevent graininess. Adjust salt gradually due to salty bacon and cheese. Add broth or milk if soup is too thick.
