  • 6 oz Genoa salami, diced
  • 8 oz mozzarella pearls
  • 1 cup cherry tomatoes, halved
  • ½ cup pepperoncini, sliced
  • 1 medium red bell pepper, diced
  • ½ small red onion, thinly sliced
  • ½ cup black olives, sliced
  • ¼ cup fresh basil, chopped
  • ¾ cup mayonnaise
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Italian seasoning
  • ½ teaspoon garlic powder
  • Salt and black pepper to taste

Instructions

  1. Cook the pasta: Bring a large pot of salted water to a rolling boil. Add the rotini and cook according to package directions until al dente, about 8-10 minutes.
  2. Rinse and cool the pasta: Drain the pasta in a colander and rinse under cold running water for about 30 seconds. Shake well to remove excess water.
  3. Prep your ingredients: While the pasta cooks, dice the salami into small cubes (about ¼-inch pieces). Halve the cherry tomatoes. Slice the pepperoncini and black olives. Dice the red bell pepper. Thinly slice the red onion. Chop the fresh basil. Drain the mozzarella pearls.
  4. Make the dressing: In a small bowl or jar, combine the mayonnaise, red wine vinegar, Italian seasoning, garlic powder, and a pinch of salt and pepper. Whisk until smooth or shake vigorously.
  5. Combine everything: In a large mixing bowl, add the cooled pasta, diced salami, mozzarella pearls, cherry tomatoes, pepperoncini, red bell pepper, red onion, and black olives. Pour the dressing over the top.
  6. Toss gently: Use a rubber spatula to fold everything together until the pasta and ingredients are evenly coated.
  7. Add the basil and chill: Fold in the chopped fresh basil. Cover the bowl and refrigerate for at least 30 minutes before serving.

Notes

Don’t skip the chilling step—it lets the flavors meld. For a lighter option, swap half the mayo with plain Greek yogurt. The salad tastes even better the next day.
