  • 1 cup (240ml) milk (whole, oat, almond, or coconut)
  • 3 tablespoons (48g) creamy peanut butter
  • 1 medium ripe banana, mashed
  • 12 tablespoons (15-30ml) maple syrup or honey
  • 1 tablespoon (12g) chia seeds (optional)
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • Optional toppings: sliced banana, extra peanut butter, cinnamon, chopped peanuts, dark chocolate chips

Instructions

  1. Mash the ripe banana in your jar or mixing bowl with a fork until mostly smooth with a few small lumps.
  2. Add the milk, peanut butter, maple syrup (or honey), and vanilla extract. If peanut butter is cold, microwave for 10 seconds to loosen.
  3. Stir everything together until the peanut butter is fully incorporated and the banana is evenly distributed.
  4. Add the rolled oats, chia seeds (if using), and a pinch of salt. Mix until every oat is coated in the liquid.
  5. Transfer to a mason jar or airtight container if you mixed in a bowl. Screw the lid on tight.
  6. Refrigerate for at least 6 hours, but overnight (8-12 hours) is best.
  7. In the morning, stir well. If too thick, add a splash of milk to loosen.
  8. Add desired toppings and enjoy cold, or let sit at room temperature for 10-15 minutes.

Notes

For best texture, use rolled oats (not quick or steel-cut). The oats keep in the fridge for up to 5 days. Add fresh toppings like banana or berries just before eating to prevent mushiness. If making multiple jars, leave toppings off until serving. For a thicker consistency, add an extra teaspoon of chia seeds. For a thinner consistency, add a splash of milk in the morning.
