These creamy peanut butter banana overnight oats are a quick, no-cook breakfast that comes together in just 5 minutes. With simple pantry ingredients, they deliver a perfectly creamy texture and balanced flavor, making mornings easier and more delicious.

Ingredients

Scale
  • 1/2 cup rolled oats
  • 1 ripe banana
  • 2 tablespoons creamy peanut butter
  • 1/2 cup milk of choice
  • 1/4 cup Greek yogurt
  • 1 tablespoon maple syrup or honey
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon chia seeds (optional)
  • Pinch of salt

Instructions

  1. In a jar or container, mash the ripe banana with a fork until mostly smooth.
  2. Add the peanut butter and stir into the mashed banana until combined.
  3. Pour in the milk, Greek yogurt, maple syrup or honey, and vanilla extract. Stir until smooth.
  4. Add the rolled oats, chia seeds (if using), and a pinch of salt. Stir well to combine, ensuring all oats are submerged.
  5. Stir again after about a minute to ensure even distribution.
  6. Seal the jar tightly and refrigerate for at least 6 hours, preferably overnight.
  7. In the morning, stir the oats. If too thick, add a splash of milk. Top with sliced banana, a drizzle of peanut butter, and other desired toppings.

Notes

Use a very ripe banana for natural sweetness. For best texture, consume within 12-24 hours. To warm, microwave for 45-60 seconds. Add toppings just before eating to prevent sogginess.
