  • ¾ cup unsweetened almond milk (or any milk of choice)
  • 1½ tablespoons pure maple syrup
  • ½ teaspoon vanilla extract
  • ½ teaspoon pumpkin pie spice
  • Pinch of salt
  • Optional toppings: Greek yogurt, granola, toasted pecans, extra maple syrup, dark chocolate shavings

Instructions

  1. In a jar or container, combine 3 tablespoons chia seeds, ½ teaspoon pumpkin pie spice, and a pinch of salt. Stir with a fork to distribute spices evenly.
  2. Add ¾ cup unsweetened almond milk, ¼ cup pumpkin puree, 1½ tablespoons maple syrup, and ½ teaspoon vanilla extract.
  3. Stir thoroughly with a whisk or fork, scraping the bottom and sides to ensure no dry chia seeds remain.
  4. Put the lid on the jar and shake vigorously for 15-20 seconds.
  5. Let the jar sit for 5 minutes, then stir or shake again to prevent clumping.
  6. Refrigerate for at least 4 hours, preferably overnight (6-8 hours is ideal).
  7. After refrigeration, stir the pudding. If too thick, add a tablespoon or two of milk; if too thin, add another teaspoon of chia seeds and refrigerate for another hour.
  8. Serve cold, straight from the jar or spooned into a bowl. Add desired toppings just before serving.

Notes

Use room temperature ingredients for even hydration. Don’t skip the 5-minute stir to prevent clumping. Store in an airtight container in the fridge for up to 5 days. For best texture, serve cold. Toppings should be added just before serving to avoid sogginess.
