Instructions

  1. Slice chicken thighs or breasts into 3-4 ounce pieces and pat dry with paper towels.
  2. In one bowl, whisk together buttermilk, garlic powder, paprika, salt, and pepper.
  3. In another bowl, combine flour and panko breadcrumbs.
  4. Dip each chicken piece into the buttermilk mixture, then dredge thoroughly in the flour-panko mix. Press coating to adhere well. Rest coated chicken for 10 minutes.
  5. Heat about 1 inch of vegetable oil in a skillet over medium-high heat to 350ยฐF (175ยฐC). Fry chicken pieces in batches for 3-4 minutes per side until golden and cooked through (internal temp 165ยฐF/74ยฐC). Drain on paper towels or wire rack.
  6. Toss fried chicken pieces in buffalo sauce while still warm, coating evenly but lightly.
  7. In a large bowl, combine shredded cabbage, carrot, blue cheese, mayonnaise, Greek yogurt, lemon juice, honey, salt, and pepper. Mix gently until evenly coated.
  8. Spread softened butter on slider buns and toast in a hot skillet until golden and crisp on the cut side.
  9. Assemble sliders by layering buffalo chicken on the bottom bun, topping with a generous scoop of blue cheese slaw, then placing the top bun. Serve immediately.
