  • Salt and black pepper, to taste
  • 4 cloves garlic, minced
  • 1 tablespoon fresh thyme leaves
  • 1 tablespoon fresh rosemary leaves
  • 1 tablespoon fresh parsley, chopped (optional, for garnish)
  • 1 tablespoon olive oil or avocado oil
  • 2 tablespoons unsalted butter
  • Juice and zest of 1 lemon
  • 1/2 cup (120 ml) chicken broth or white wine
  • Red pepper flakes (optional, for heat)
  • 1 small shallot, finely chopped (optional)

Instructions

  1. Pat chicken thighs dry with paper towels and season generously with salt and pepper on both sides. Let sit at room temperature for 10 minutes.
  2. Mince garlic, pick thyme and rosemary leaves, and zest one lemon. Set aside.
  3. Heat a large cast-iron skillet over medium-high heat. Add 1 tablespoon avocado or olive oil and heat until shimmering, about 2 minutes.
  4. Place chicken thighs skin-side down in the hot pan without crowding. Cook undisturbed for 7-9 minutes until skin is deeply golden and crispy.
  5. Flip chicken and cook for another 5-7 minutes until internal temperature reaches 165ยฐF (74ยฐC). Remove chicken and tent with foil to rest.
  6. Lower heat to medium. Add 2 tablespoons unsalted butter to the same skillet, scraping up browned bits with a wooden spoon.
  7. Add minced garlic, herbs, and optional shallots; cook for about 30 seconds until fragrant.
  8. Pour in chicken broth or white wine and lemon juice. Stir and simmer for 2-3 minutes to reduce and thicken slightly.
  9. Stir in lemon zest and season with salt, pepper, and optional red pepper flakes. Adjust seasoning to taste.
  10. Spoon sauce over rested chicken thighs and garnish with chopped parsley if desired. Serve immediately.

Pat chicken skin dry thoroughly to ensure crispiness. Do not overcrowd the pan to avoid steaming. Use a meat thermometer to check for doneness at 165ยฐF (74ยฐC). Rest chicken before serving to retain juiciness. The pan sauce is made in the same skillet to capture all the flavorful browned bits. For a dairy-free option, substitute butter with dairy-free margarine or extra oil. Optional additions include red pepper flakes for heat and shallots for complexity.
