  • 1 teaspoon salt

  • 1/2 teaspoon onion powder
  • 1/4 teaspoon paprika (smoked paprika preferred)
  • 1/3 cup honey
  • 4 cloves garlic, minced finely
  • 2 tablespoons soy sauce (low sodium preferred)
  • 2 tablespoons unsalted butter
  • 1 tablespoon rice vinegar (or apple cider vinegar)
  • 1 teaspoon sriracha or chili garlic sauce (optional)
  • 1 tablespoon sesame seeds, for garnish
  • 2 green onions, thinly sliced, for garnish

Instructions

  1. Pat the chicken wings completely dry with paper towels. For extra crispiness, lay the dried wings on a paper towel-lined baking sheet and refrigerate uncovered for 2-4 hours or overnight.
  2. In a large mixing bowl, whisk together baking powder, salt, pepper, garlic powder, onion powder, and paprika. Add the dried wings and toss well to coat every surface.
  3. Place a wire rack inside a large baking sheet. Arrange the wings in a single layer on the rack, making sure they are not touching.
  4. Preheat oven to 400°F (200°C). Bake the wings for 30 minutes. Flip each wing using tongs and bake for another 20-25 minutes until deep golden brown and crackled.
  5. While the wings bake, make the glaze: In a small saucepan over medium heat, melt the butter. Add minced garlic and cook for about 1 minute until fragrant. Add honey, soy sauce, rice vinegar, and sriracha (if using). Stir and let simmer gently for 3-4 minutes until slightly thickened. Remove from heat.
