  • 8 large flour tortillas (6 to 8 inches)

  • 1/2 teaspoon cumin powder
  • Salt and black pepper to taste
  • Vegetable oil or avocado oil for frying

Instructions

  1. Cook the chorizo and aromatics: Heat a large skillet over medium heat and add the chorizo, breaking it up with a wooden spoon. When it starts to brown, add the chopped onion and sautรฉ until soft, about 5 minutes. Stir in minced garlic and cumin, cooking for another 1-2 minutes until fragrant. Drain excess fat if necessary, then season with salt and pepper. Set aside to cool slightly.
  2. Scramble the eggs: In a bowl, beat the eggs lightly with a pinch of salt. Wipe out the skillet and melt a bit of butter or oil over medium-low heat. Pour in eggs and cook gently, stirring occasionally, until just set but still moist. Remove from heat.
  3. Mix filling: Combine the cooked chorizo mixture with scrambled eggs and shredded Pepper Jack cheese in a bowl. Stir to blend evenly.
  4. Fill and roll taquitos: Warm the tortillas briefly in a dry pan or microwave to make them pliable. Place about 2 tablespoons of filling near one edge of each tortilla, then roll tightly. Secure with a toothpick if needed.
  5. Fry taquitos: Pour about 1/2 inch of oil into a skillet and heat over medium-high until shimmering but not smoking. Fry taquitos seam-side down first, turning carefully until all sides are golden and crispy. Drain on paper towels.
  6. Cool and store: Let the taquitos cool completely before freezing or refrigerating. For freezing, place them in a single layer on a baking sheet until firm, then transfer to a zip-top bag or airtight container.
  7. Reheat: To reheat from frozen, bake in a preheated 400ยฐF oven for 15-20 minutes or air fry at 375ยฐF for about 10 minutes until crispy and heated through.
