Crispy One-Pan Brown Butter Gnocchi Recipe with Roasted Butternut Squash and Sage

  • 1 pound (450 g) potato gnocchi (store-bought or homemade)
  • 3 cups peeled and cubed butternut squash (about 1 small medium squash)
  • 4 tablespoons (56 g) unsalted butter
  • 1215 fresh sage leaves, whole
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • ½ cup freshly grated Parmesan cheese (optional)

Instructions

  1. Peel, seed, and cut the butternut squash into 1-inch cubes. Toss with olive oil, salt, and pepper in a mixing bowl.
  2. Heat a large nonstick skillet or cast iron pan over medium heat. Add the oiled squash cubes and spread evenly. Cook for 8–10 minutes, stirring occasionally until softened and caramelized on the edges.
  3. While the squash roasts, melt the butter in a small saucepan over medium heat. Brown the butter by cooking until it foams and turns golden with a nutty aroma, about 3–5 minutes. Remove from heat.
  4. Push the squash to one side of the skillet. Add the gnocchi in a single layer and cook undisturbed for 2–3 minutes until the bottoms start crisping. Flip or stir gently and cook another 3 minutes to crisp the other sides.
  5. Add the minced garlic and whole sage leaves to the pan. Stir gently and cook for about 2 minutes until the garlic softens and the sage crisps.
  6. Pour the browned butter over the pan contents and toss gently to coat everything evenly.
  7. Taste and adjust seasoning with salt and pepper. Sprinkle grated Parmesan cheese on top if desired. Serve hot.

Notes

If gnocchi isn’t crisping well, increase heat slightly but watch carefully to avoid burning. Don’t overcrowd the pan to ensure crispiness. Use whole sage leaves for best crisp texture. Reheat leftovers gently in a skillet to maintain crispness; avoid microwave reheating.
