Instructions

  1. Prepare the Phyllo Cups (15-20 minutes): Preheat oven to 350°F (175°C). Unroll thawed phyllo dough carefully, covering unused sheets with a damp towel. Brush one sheet with melted butter, layer another sheet on top and brush again. Repeat for 3-4 layers. Cut layered phyllo into 4×4 inch squares. Press each square into muffin tin cups to form bowls.   2. Make the Taco Filling (10-15 minutes): Heat skillet over medium heat. Add ground beef and chopped onion; cook 6-8 minutes until browned and onion is translucent. Drain excess fat if needed. Add minced garlic and taco seasoning; cook 2-3 minutes more. Adjust seasoning with salt, pepper, or chili powder. Optionally add splash of water or tomato sauce for juiciness.
  3. Prepare Fresh Pico de Gallo (10 minutes): Combine diced tomatoes, white onion, cilantro, jalapeño (if using), lime juice, salt, and pepper in a bowl. Stir gently and let sit 5-10 minutes to marry flavors.
  4. Assemble the Taco Bites (5 minutes): Spoon taco meat into each phyllo cup. Add shredded cheese on top while filling is warm to melt slightly. Top with a teaspoon of pico de gallo. Add a dollop of sour cream or Greek yogurt if desired. Serve immediately for best crispness.
