A flavorful and easy-to-make dip that captures the essence of a smash burger with layers of crispy beef, melty cheese, tangy special sauce, and crunchy pickles. Perfect for game day or any casual gathering.

Ingredients

Scale
  • 1 lb ground beef (80/20 blend preferred for juiciness)
  • Salt and freshly ground black pepper, to taste
  • 1 tsp garlic powder
  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup mayonnaise
  • 2 tbsp ketchup
  • 1 tbsp yellow mustard
  • 1 tbsp sweet pickle relish
  • 1 tsp smoked paprika
  • 1 tsp apple cider vinegar
  • Pinch of cayenne pepper (optional)
  • ½ cup dill pickle slices, chopped
  • 2 green onions, thinly sliced

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat a skillet over medium-high heat. Add the ground beef, breaking it up with a spatula. Season with salt, pepper, and garlic powder. Cook until the beef is browned and crispy in spots, about 7-8 minutes. Drain excess fat if needed.
  3. While the beef cooks, whisk together mayonnaise, ketchup, mustard, sweet pickle relish, smoked paprika, apple cider vinegar, and cayenne pepper (if using) in a bowl. Adjust seasoning to your taste.
  4. Spread the cooked beef evenly in your oven-safe skillet or baking dish.
  5. Sprinkle the shredded cheddar and mozzarella cheese evenly over the beef layer.
  6. Place the skillet in the oven and bake for 10-12 minutes, or until the cheese is melted and bubbly, with golden edges.
  7. Remove from oven and drizzle the special sauce over the top.
  8. Scatter the chopped dill pickles and sliced green onions evenly across the dip.
  9. Serve warm with sturdy chips, toasted bread, or sliced veggies for dipping.

Notes

For extra caramelized crust, broil the dip for the last 2 minutes but watch closely to avoid burning. Cook beef in batches to avoid steaming and ensure a crispy crust. Adjust special sauce seasoning to taste. Use fresh pickles for best crunch. Can swap mayo for dairy-free version and cheddar for pepper jack for variations.
