  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1 tbsp unsweetened cocoa powder (plus extra for dusting)
  • 2 tbsp dark chocolate shavings or mini chocolate chips (optional)

Instructions

  1. Prepare the mascarpone cream: In a medium bowl, whisk together mascarpone cheese and Greek yogurt until smooth and creamy, about 2-3 minutes. Add vanilla extract and maple syrup, then whisk again to combine evenly. If mixture is too thick, add 1 tsp milk to loosen.
  2. Mix the oats and espresso: In a separate bowl, combine rolled oats, milk, espresso powder, and 1 tablespoon cocoa powder. Stir well and let sit for 5 minutes to soften oats and infuse espresso flavor.
  3. Combine oats and cream: Fold mascarpone cream into oat mixture gently but thoroughly until velvety with no lumps. Fold in chocolate shavings or mini chips if using.
  4. Divide into containers: Spoon mixture evenly into 2-3 glass jars or airtight containers. Tap gently to settle oats and smooth tops.
  5. Chill overnight: Cover and refrigerate for at least 6 hours, preferably overnight, until oats thicken to pudding-like consistency.
  6. Finish with cocoa dusting: Just before serving, dust tops lightly with unsweetened cocoa powder using a fine mesh sieve or small strainer.
  7. Serve: Enjoy cold straight from the fridge or let sit at room temperature for 10 minutes for a softer texture.

Use instant espresso powder for smooth coffee flavor; room temperature mascarpone blends better to avoid lumps. Adjust sweetness with maple syrup to taste.
