This Easy 3-Ingredient Crockpot Chili with Ground Beef is a set-it-and-forget-it meal that delivers rich, hearty flavor with minimal effort. Brown the beef, dump in the cans, and let the slow cooker do the rest.

  • 1 pound ground beef (80/20)
  • 1 can (14.5 ounces) diced tomatoes with green chiles (undrained)
  • 2 cans (15 ounces each) chili beans in sauce (undrained)

Instructions

  1. Brown the ground beef in a large skillet over medium-high heat, breaking it into crumbles, for 5 to 7 minutes until fully browned. Season with salt and pepper if desired. Do not drain the fat unless you prefer a leaner chili.
  2. Transfer the browned beef to a 4 to 6 quart slow cooker.
  3. Add the undrained can of diced tomatoes with green chiles and both undrained cans of chili beans. Stir to combine.
  4. Cover and cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours. For best texture, cook on LOW.
  5. About 30 minutes before serving, stir the chili. Taste and adjust salt if needed. For a thicker chili, let it cook uncovered for the last 30 minutes. Serve hot.

Notes

Do not drain the canned tomatoes or beans; the liquid is essential for the sauce. For a thicker chili, mash a few beans against the side of the slow cooker before serving. Leftovers can be refrigerated for up to 4 days or frozen for up to 3 months.
