  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract

  • ยฝ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ยผ teaspoon ground nutmeg
  • ยผ teaspoon ground ginger

  • For the Cinnamon Sugar Coating:
  • ยฝ cup (100g) granulated sugar
  • 1 ยฝ tablespoons ground cinnamon
  • 3 tablespoons (42g) unsalted butter, melted

Instructions

  1. Preheat oven to 350ยฐF (175ยฐC). Generously spray a 6-cavity donut pan with non-stick baking spray, ensuring all crevices are coated.
  2. In a large bowl, whisk together flour, granulated sugar, brown sugar, baking powder, baking soda, salt, cinnamon, nutmeg, ginger, and cloves until evenly distributed.
  3. In a separate medium bowl, whisk together pumpkin puree, melted butter, milk, egg, and vanilla extract until smooth and well combined.
  4. Pour the wet ingredients into the dry ingredients. Stir gently with a spatula or wooden spoon until just combined. Do not overmix; a few small lumps are fine.
  5. Transfer batter to a piping bag or zip-top bag with the corner snipped off. Pipe batter into each donut cavity, filling about ยพ full.
  6. Bake for 10-12 minutes, or until donuts are golden brown around the edges and a toothpick inserted into the thickest part comes out clean or with a few moist crumbs.
  7. Let donuts cool in the pan for 2 minutes, then turn out onto a cooling rack. While still warm, brush each donut with melted butter, then immediately dip or roll in the cinnamon sugar mixture.
