  • 1 packet (2 ยผ teaspoons) active dry yeast
  • 1 cup (240ml) warm water (about 110ยฐF)
  • 1 tablespoon granulated sugar
  • 2 tablespoons unsalted butter, melted (plus more for brushing)
  • 1 teaspoon salt
  • ยฝ cup baking soda
  • 8 cups (2 liters) water for the bath
  • Coarse sea salt for sprinkling
  • 8 ounces (225g) sharp cheddar cheese, freshly grated
  • ยพ cup (180ml) beer (lager or pale ale)
  • 4 ounces (113g) cream cheese, softened
  • 1 teaspoon Dijon mustard
  • ยฝ teaspoon Worcestershire sauce
  • ยผ teaspoon garlic powder
  • Salt and pepper to taste
  • Optional: pinch of cayenne pepper or smoked paprika

Instructions

  1. Activate the yeast: In a large mixing bowl, combine warm water (110ยฐF) and sugar. Sprinkle yeast on top and let sit for 5-10 minutes until foamy.
  2. Make the dough: Add melted butter, salt, and 2 cups of flour to the yeast mixture. Stir until a shaggy dough forms. Gradually add remaining ยฝ cup flour until dough pulls away from the bowl.
  3. Knead the dough: Turn onto a lightly floured surface and knead for 5-7 minutes until smooth and elastic.
  4. Let it rise: Place dough in a lightly oiled bowl, cover, and let rise in a warm spot for 30 minutes until doubled in size.
  5. Preheat and prep: Preheat oven to 425ยฐF (220ยฐC). Line a baking sheet with parchment paper. Bring 8 cups water and ยฝ cup baking soda to a boil in a large pot (add baking soda slowly as it will fizz).
  6. Shape the bites: Punch down dough and divide into 4 pieces. Roll each into a 12-inch rope, then cut into 1-inch pieces.
  7. The baking soda bath: Reduce boiling water to a gentle simmer. Drop 6-8 bites in at a time, boil for 30 seconds, flip, and boil another 30 seconds. Transfer to baking sheet with slotted spoon.
  8. Bake: Sprinkle immediately with coarse sea salt. Bake for 12-15 minutes until deep golden brown.
  9. Butter them up: Brush hot pretzel bites with melted butter. Let cool 5 minutes before serving.
  10. Make the beer cheese dip: In a small saucepan over medium-low heat, whisk beer and cream cheese until smooth. Gradually add shredded cheddar, whisking until melted. Stir in Dijon mustard, Worcestershire sauce, garlic powder, salt, and pepper. Keep heat low. Remove from heat and transfer to serving bowl.

Notes

Don’t skip the baking soda bathโ€”it gives pretzels their signature flavor and dark crust. Use freshly grated cheddar for a smooth dip. Keep the dip warm in a small slow cooker if not serving immediately. For freezing, freeze unbaked bites after the baking soda bath; bake from frozen adding 2-3 minutes.
