Easy Crockpot Mississippi Pot Roast Recipe (3 Ingredients)

This easy crockpot Mississippi pot roast uses just three ingredients and a slow cooker to create the most tender, flavorful pot roast imaginable. It’s the perfect set-it-and-forget-it meal for busy days.

  • 34 pounds chuck roast
  • 1 packet (1 ounce) ranch dressing mix
  • 1 packet (1 ounce) au jus gravy mix
  • 1 stick (8 tablespoons) unsalted butter
  • 46 pepperoncini peppers (optional, plus 2 tablespoons juice)

Instructions

  1. Trim the roast (if needed): Pat the chuck roast dry with paper towels. Trim any large pieces of hard fat from the outside, leaving some fat for flavor.
  2. Place the roast in the slow cooker: Put the trimmed roast in the center of a 6-quart slow cooker. Do not sear.
  3. Sprinkle the seasoning packets: Open both packets and sprinkle them evenly over the top of the roast. Do not stir.
  4. Add the butter: Place the whole stick of butter on top of the seasoned roast.
  5. Add pepperoncinis (optional but recommended): Tuck 4-6 pepperoncini peppers around the roast and pour in about 2 tablespoons of the juice from the jar.
  6. Cook low and slow: Cover and cook on LOW for 8 hours. Do not cook on high.
  7. Shred the meat: After 8 hours, turn off the slow cooker. Use two forks to shred the roast right in the slow cooker, mixing it with the juices.
  8. Serve and enjoy: Spoon the shredded beef and gravy over mashed potatoes, egg noodles, or crusty bread.

Notes

Don’t lift the lid during cooking. Place the fat cap side up. Do not add extra liquid. Shred the meat in the juices. This dish tastes even better the next day. Skim excess fat if desired.
