These adorable Frankenstein guacamole cups are made with avocado shells filled with fresh guacamole and decorated with black olive slices to look like the monster’s face. They’re quick, easy, and perfect for Halloween parties.

Ingredients

Scale
  • 4 ripe avocados
  • 1 medium lime, juiced (about 2 tablespoons)
  • 1/4 cup finely diced red onion
  • 1 medium jalapeรฑo, seeded and minced
  • 1/4 cup fresh cilantro, chopped
  • 1 medium Roma tomato, seeded and diced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 can (6 ounces) sliced black olives
  • Optional: small pretzel sticks
  • Optional: red bell pepper strips

Instructions

  1. Carefully cut each avocado in half lengthwise, working around the pit. Twist the halves to separate them. Remove the pit by gently tapping it with your knife blade and twisting.
  2. Using a spoon, gently scoop the avocado flesh out of each half, trying to keep the skin intact. Set the empty shells aside on your serving platter. Place the avocado flesh in your mixing bowl.
  3. Using a fork or potato masher, mash the avocado to your desired consistency (mostly smooth with a few small chunks).
  4. Add the lime juice, diced red onion, minced jalapeรฑo, chopped cilantro, diced tomato, salt, and pepper to the bowl. Stir everything together until well combined. Taste and adjust the seasoning.
  5. Spoon the guacamole back into the empty avocado shells, mounding it slightly above the rim.
  6. Arrange sliced black olives on the guacamole to create Frankenstein’s face: place two olive slices horizontally across the top for stitches, two whole slices for eyes, and a few slices in a crooked line for the mouth. Optionally, insert pretzel stick halves on each side for neck bolts.
  7. Repeat for remaining cups. Serve immediately or refrigerate for up to 30 minutes.

Notes

Choose avocados that are ripe but still firm enough to hold their shape. For best results, assemble just before serving to prevent browning. Press plastic wrap directly onto the surface of the guacamole if storing.
