  • ¼ cup (60ml) maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup (150g) fresh blueberries
  • 2 tablespoons unsalted butter, melted

Instructions

  1. Preheat your oven to 375°F (190°C). Grease or line a 12-cup muffin tin with paper liners to prevent sticking.
  2. In a large bowl, whisk together whole wheat flour, baking powder, baking soda, ground cinnamon, and salt.
  3. In a separate bowl, whisk eggs until slightly frothy. Add Greek yogurt, milk, maple syrup, vanilla extract, and melted butter. Mix until smooth but do not overbeat.
  4. Pour the wet mixture into the dry ingredients and gently fold with a spatula until just combined; lumps are okay.
  5. Gently fold in fresh blueberries, being careful not to break them up.
  6. Spoon batter evenly into the prepared muffin cups, filling about ¾ full.
  7. Bake for 18–22 minutes, or until a toothpick inserted in the center comes out clean and tops are golden and spring back when pressed.
  8. Let muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
  9. Once cooled, enjoy fresh or store in an airtight freezer-safe container or bag. To reheat, microwave for 30–45 seconds or warm in a toaster oven until heated through.

Notes

Do not overmix the batter to avoid tough muffins. Use room temperature ingredients for a lighter crumb. Toss frozen blueberries in flour before folding in to prevent sinking.
