  • 1/2 cup candy corn
  • 1/2 cup black olives
  • 1/2 cup roasted, salted almonds
  • 1/2 cup dried cranberries or cherries
  • 1/4 cup pumpkin seeds (pepitas)
  • Fresh rosemary or sage sprigs for garnish

Instructions

  1. Make the candy corn cheese: In a small mixing bowl, beat the softened cream cheese with an electric mixer until smooth and fluffy, about 2 minutes. Add the powdered sugar and vanilla extract, and beat until fully combined. If using, stir in the melted white chocolate chips until smooth.
  2. Color the cheese: Divide the cheese mixture into three equal parts in separate bowls. Leave one part white. Color the second part with yellow food coloring until bright yellow. Color the third part with orange food coloring until deep orange. Mix each until uniform.
  3. Layer the cheese: Line a small, shallow bowl or a piece of parchment paper with plastic wrap. Spoon the orange cheese into the bottom third, then the yellow cheese in the middle, and finally the white cheese on top. Smooth the layers gently. Fold the plastic wrap over the top and refrigerate for at least 30 minutes, or up to 24 hours, to firm up.
  4. Assemble the board: When ready to serve, remove the candy corn cheese from the fridge. Unwrap it and place it in the center of your serving board. Arrange the pretzel sticks, apple slices, candy corn, black olives, almonds, dried cranberries, and pumpkin seeds around it in small, intentional clusters. Use small bowls for anything that might roll away.
  5. Garnish and serve: Tuck fresh rosemary or sage sprigs around the cheese and board for a spooky, woodsy feel. Serve immediately, or keep chilled until guests arrive. The cheese will soften as it sits, making it easier to spread.

Notes

For best texture, use full-fat cream cheese and let it soften at room temperature for 30 minutes before mixing. If the cheese is too soft to layer, freeze for 10 minutes. The cheese can be made up to 2 days ahead and stored in the fridge. Serve at room temperature for best flavor.
