These Easy Halloween Rice Krispie Ghost Treats are the perfect last-minute Halloween recipe that looks adorable and tastes amazing. Made with simple pantry ingredients, they come together in under an hour and are a guaranteed crowd-pleaser.

Ingredients

Scale
  • 6 tablespoons unsalted butter
  • 1 (10-ounce) bag mini marshmallows
  • 6 cups Rice Krispies cereal
  • 1/4 teaspoon salt (optional)
  • 1 cup white chocolate chips
  • 1 tablespoon coconut oil or vegetable shortening
  • 48 candy eyes

Instructions

  1. Line a 9×13-inch baking pan with parchment paper, leaving overhang on two sides. Lightly spray with non-stick cooking spray.
  2. In a large pot over medium-low heat, melt the butter, swirling occasionally, until melted (about 2-3 minutes).
  3. Add the mini marshmallows and stir constantly until completely melted and smooth (about 5-7 minutes). Remove from heat.
  4. Stir in the salt (if using), then add the Rice Krispies cereal all at once. Fold gently until evenly coated.
  5. Scrape the mixture into the prepared pan. Spray a spatula with cooking spray and press into an even layer. Let cool completely at room temperature (about 30 minutes).
  6. Lift the block out using the parchment overhang. Cut into 24 rectangles (about 2×2 inches) using a sharp knife or pizza cutter. Round corners if desired.
  7. In a microwave-safe bowl, combine white chocolate chips and coconut oil. Microwave in 20-second intervals, stirring between each, until smooth (about 60-90 seconds total).
  8. Dip a fork into the melted white chocolate and drizzle over the treats in a thin, uneven pattern.
  9. While the white chocolate is still wet, press two candy eyes onto each ghost near the top.
  10. Place decorated treats on a wire rack or parchment-lined sheet. Let sit at room temperature until white chocolate is firm (about 20-30 minutes).

Notes

For best texture, melt marshmallows on low heat and do not press the mixture too firmly into the pan. The treats taste even better the next day. Store in an airtight container at room temperature for up to 5 days. Freeze undecorated treats for up to 3 months.
