Easy Healthy Turkey Chili for Game Day Tailgates

A lean, flavorful turkey chili that’s perfect for game day tailgates. It’s quick to make, uses simple ingredients, and is a crowd-pleaser that even beef purists will love.

  • 2 tablespoons olive oil
  • 1 large yellow onion, diced
  • 1 red bell pepper, diced
  • 4 cloves garlic, minced
  • 1 pound lean ground turkey (93/7 recommended)
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon chipotle chili powder (or to taste)
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • 1 can (14.5 ounces) crushed tomatoes
  • 2 tablespoons tomato paste
  • 1 cup low-sodium chicken broth
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 cup frozen corn
  • Juice of 1 lime

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and red bell pepper. Cook, stirring occasionally, until onion is translucent and pepper softens, about 4 minutes. Add minced garlic and cook for 30 seconds until fragrant.
  2. Add ground turkey to the pot. Break it up with a wooden spoon into small crumbles. Cook until no longer pink, stirring occasionally, about 6-8 minutes. Season with a pinch of salt.
  3. Sprinkle chili powder, cumin, smoked paprika, chipotle powder, oregano, and black pepper over the cooked turkey. Stir constantly for about 1 minute until spices are fragrant.
  4. Add tomato paste and stir into the meat and spice mixture. Cook for 2 minutes, stirring frequently. Then pour in crushed tomatoes and chicken broth. Stir well, scraping up any browned bits from the bottom of the pot.
  5. Bring chili to a gentle boil, then reduce heat to low. Cover and simmer for at least 30 minutes, stirring every 10 minutes. After 30 minutes, add drained kidney beans, black beans, and frozen corn. Stir to combine, then simmer uncovered for another 10-15 minutes until chili thickens.
  6. Remove pot from heat. Stir in fresh lime juice. Taste and adjust salt and pepper. Serve hot with desired toppings.

Notes

For best flavor, bloom the spices in the rendered fat. Chili tastes even better the next day. Make ahead and reheat slowly for game day. If using 99% fat-free turkey, add extra broth to prevent dryness. Don’t skip the lime juice at the end.
