This creamy, spicy buffalo chicken dip comes together in under 15 minutes of active prep time, then the slow cooker does the rest. Perfect for game day, potlucks, or feeding a crowd without stress.

Ingredients

Scale
  • 16 ounces cream cheese, cold and cut into cubes
  • 2 cups cooked shredded chicken
  • 1 cup buffalo wing sauce
  • 1 cup ranch dressing
  • 2 cups shredded cheddar cheese, divided
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup green onions, sliced (optional for garnish)

Instructions

  1. Cube the cream cheese while it is still cold. Cut the block into roughly 1-inch pieces. Do not bother softening it first.
  2. Add everything except 1 cup of cheddar cheese and the green onions to your slow cooker. Place the cubed cream cheese, shredded chicken, buffalo sauce, ranch dressing, 1 cup of cheddar, and all the mozzarella into the slow cooker. Do not stir yet.
  3. Cook on low for 2 hours. Do not lift the lid during this time.
  4. Stir everything together after 2 hours. The cream cheese should be completely melted and the dip should look smooth and creamy.
  5. Add the remaining 1 cup of cheddar cheese on top. Sprinkle it evenly over the surface of the dip. Do not stir it in. Cover and cook on low for another 15-20 minutes, until the cheese on top is melted and bubbly.
  6. Garnish and serve. Sprinkle the sliced green onions over the top if you are using them. Switch the slow cooker to the warm setting and serve directly from the pot.

Notes

For the best texture, use full-fat cream cheese. The reduced-fat versions sometimes separate or turn grainy in the slow cooker. If you are using rotisserie chicken, remove the skin before shredding. For a thicker dip, use block cream cheese instead of spreadable kind. If dip looks greasy or separated, stir in a tablespoon of cornstarch mixed with two tablespoons of cold water.
